Lamb with mint pesto recipe details
Ingredients
3 kg | leg of lamb, boned, fat trimmed |
80 g | fresh mint leaves, chopped |
30 g | fresh parsley, chopped |
3 clove(s) | garlic, sliced |
60 ml | olive oil |
50 g | cream cheese |
1 ½ tbsp | lemon juice |
Instructions
Combine mint, parsley, 2 cloves of the garlic, oil, cheese and lemon juice in a blender and process until smooth.Make small cuts in surface of lamb and insert garlic slivers. Spread meat with about two-thirds of the mint pesto. Tie meat every 5 cm with cotton string and then spread remaining mint pesto over meat. Cover with foil.
Preheat oven to 180°C.
Bake for 60-90 minutes.
To serve, discard strings and cut meat across the grain into thin slices.
