Lamb stew with vegetables recipe details
Ingredients
1 kg | lamb from the shoulder, boneless |
salt and pepper | |
5 tbsp | olive oil |
3 tbsp | tomato puree |
500 ml | beef stock |
800 g | waxy potatoes |
3 | red bell peppers, approx. 600g |
3 | zucchini, approx. 600g |
1 | Spanish onion |
2 sprig(s) | rosemary, small ones |
Instructions
Dice the meat in 3cm cubes. Season with salt and pepper.Heat the oil and sauté the lamb cubes until slightly brown all around. Stir in the tomato purée then add the beef stock and bring to the boil. Cover and simmer ocer low heat for 50 minutes stirring occasionally.
Peel and dice the potatoes. Seed and cut the bell peppers in bite-sized pieces. Halve the zucchinis lengthwise then cut in slices. Dice the onion. Pluck the rosemary.
Add the vegetables, the potatoes and the rosemary to the lamb. Stir and cook for further 40 minutes. If the broth has evaporated, replace with some water. Season the stew to taste with salt and pepper.
Serve with bread.
