Lamb stew with beans and tomatoes recipe details
Ingredients
500 g | tomatoes, peeled and diced |
600 g | boned leg of lamb, cut into 2cm cubes |
8 sprig(s) | thyme, chopped |
salt and freshly ground black pepper | |
400 g | green beans, trimmed and halved, |
2 | onions, chopped |
1 clove(s) | garlic, chopped |
2 tbsp | oil |
2 tbsp | tomato puree |
400 ml | lamb stock or vegetable stock |
1 | bay leaf |
cayenne pepper |
Instructions
In a large saucepan, heat the oil. Add the meat and fry until golden all around. Remove and set aside.Put the onions, half of the tomatoes and the tomato purée into the pan and cook stirring for 2-3 minutes. Deglaze with the stock and bring to a boil. Return the meat and add the bay leaf and the thyme. Cover and cook for 20 minutes.
Add the beans and the remaining tomatoes and cook for another 8-10 minutes. Season to taste with salt, pepper and cayenne pepper.
