Lamb ragout recipe details
Ingredients
250 g | potatoes, peeled and quartered |
salt and pepper | |
150 g | lean lamb, cut in 3cm cubes |
1 tbsp | oil |
2 tbsp | onion, chopped |
2 tsp | celeriac, diced |
2 tbsp | courgette, diced |
2 tbsp | tomato puree |
4 tbsp | tomato, diced |
200 ml | vegetable stock |
1 tsp | mustard |
oregano | |
1 tsp | basil, chopped |
1 tsp | parsley, chopped |
100 ml | milk |
1 tbsp | butter |
freshly ground nutmeg |
Instructions
Cook the potatoes in salted water until soft. Drain.In a saucepan, heat the oil. Add the meat and stir-fry from all sides until browned. Add the onion, celeriac and the courgette and stir-fry for further 5 minutes. Add the tomato purée and cook another minute. Mix in the diced tomatoes and pour in the stock and bring to a boil. Stir in the mustard, basil and parsley. Season to taste with salt, pepper and oregano.
Heat the milk and the butter. Mash the cooked potatoes, adding the milk and butter. and season to taste with salt and nutmeg. Add more milk if necessary to get a smooth purée.
