Ingredients
Serves: 4- 2 pounds ground lamb
- Salt and pepper, to taste
- 1/2 cup minced fresh parsley
- 6 cloves garlic, minced
- 1 tablespoon lemon zest
- 1 tablespoon chili powder
- 1 tablespoon sweet paprika
- 1 tablespoon ground cumin
- 3 tablespoons olive oil
- 1 onion, minced
- 1 cup chicken broth
- 1 (28 ounce) can roasted diced tomatoes
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cinnamon
Preparation method
Prep: 15 mins | Cook: 10 mins1. Preheat oven to 400 degrees F and coat a baking sheet with nonstick cooking spray.
2. Toss lamb with salt, pepper, parsley, 4 cloves of garlic, lemon zest, chili powder, paprika, and cumin. Form into small meatballs, about 1-inch diameter each. Place on the baking sheet and drizzle with 2 tablespoons olive oil.
3. Bake for about 10 minutes, until meatballs are cooked through. While meatballs are baking, make the sauce:
4. Pour 1 tablespoon olive oil into a dutch oven and set over medium-high heat. Cook onions and garlic in hot oil for about 6 minutes, then add salt and pepper to taste, along with chicken broth and tomatoes. When mixture comes to a boil, add cloves and cinnamon.
5. Add meatballs to the sauce and cook for 5 minutes, stirring. Serve as is or over pasta, if desired.
