Lamb Kebabs in Pomegranate Marinade recipe

|1 kg||lamb, diced|
|2 medium||onions, quartered|
|Fo the Pomegranate Marinade:|
|90 ml||pomegranate molasses|
|3 clove(s)||garlic, minced|
|1 small||red onion, chopped|
|1 tbsp||fresh mint, chopped|
|1 tbsp||lemon zest, grated|
|1 tbsp||lemon juice|
Combine all ingredients in a saucepan and bring to a simmer, whisking. Do not bring ot a boil or the molasses will burn. Simmer for 5 minutes, then remove from heat and let cool
Pour marinade over diced meat, cover and refrigerate for about 3 hours. Thread lamb onto skewers, alternating with quartered onion slices.
Serving suggestion:Serve with Feta cheese, a Moroccan carrot salad, and some cucumbers and olives.
