Ingredients
1 kg | lamb, diced |
2 medium | onions, quartered |
skewers, soaked | |
Fo the Pomegranate Marinade: | |
90 ml | pomegranate molasses |
3 clove(s) | garlic, minced |
1 small | red onion, chopped |
1 tbsp | fresh mint, chopped |
1 tsp | sugar |
1 tsp | cardamom |
1 tbsp | lemon zest, grated |
1 tbsp | lemon juice |
Instructions
Combine all ingredients in a saucepan and bring to a simmer, whisking. Do not bring ot a boil or the molasses will burn. Simmer for 5 minutes, then remove from heat and let cool
Pour marinade over diced meat, cover and refrigerate for about 3 hours. Thread lamb onto skewers, alternating with quartered onion slices.
Serving suggestion:Serve with Feta cheese, a Moroccan carrot salad, and some cucumbers and olives.
