Ingredients
1 kg | boned leg of lamb, cut into bite-sized pieces |
salt and freshly ground black pepper | |
vegetable oil | |
6 rasher(s) | bacon, cut into strips |
4 clove(s) | garlic, chopped |
3 | onions, peeled and quartered |
8 medium | potatoes, peeled and quartered |
5 | carrots, peeled and halved langthwise |
2 | parsnips, peeled and quartered langthwise |
3 stalk(s) | celery, sliced |
2 tbsp | parsley, chopped |
1 tsp | rosemary, chopped |
1 tbsp | thyme, chopped |
2 | bay leaves |
1 bottle(s) | dry white wine |
Instructions
In a roasting tin, heat some oil and fry the meat until golden browned all around. Remove from the tin and set aside.Add the onions, garlic, bacon and the celery into the tin and stir-fry until golden. Deglaze with a dash of wine and scrape off any flavourful bits from the bottom of the pan. Return the meat and add the potatoes, carrots and parsnips. Pour in the remaining wine and add water until all is covered with liquid. Season with salt and pepper and add the herbs. Cover with a lid and bake in the preheated oven at 160°C for 4-5 hours.
Adjust the seasoning before serving.
