Ingredients
100 g | red lentils |
2 | red onions, sliced |
1 clove(s) | garlic, minced |
2 | bell peppers, red and yellow, diced |
8 | lamb chops |
4 sprig(s) | rosemary |
1 large can(s) | white beans, drained and rinsed |
salt and freshly ground black pepper | |
sugar | |
2 tsp | mixed Italian herbs |
¼ bunch(es) | watercress, chopped |
2 tbsp | red wine vinegar |
extra virgin olive oil |
Instructions
Cook the lentils in water for 3-4 minutes. Turn off the heat and allow to soak for 15 minutes.In a large pan, heat the oil and add in the lamb chops and the rosemary. Fry the chops for 3-4 minutes over high heat, turning once. Take out of the pan and keep warm.
Heat the remaining oil and sautee the onions and the garlic until lucent. Transfer into a bowl and add the bell peppers, beans and lentils. Season to taste with vinegar, salt, pepper, sugar and Italian herbs. Fold in the cress.
Serve the lamb chops with the salad.
