Kumquat pie recipe details
Ingredients
1 large can(s) | sweetened condensed milk, about 400g size |
250 ml | double cream |
120 ml | lemon juice |
160 ml | puréed kumquats |
1 | pre-baked biscuit base, 20-23cm size, see database |
Instructions
You may need about 300g of kumquats to obtain the right amount of purée. Don’t try to peel them as it is quite impossible and they are normally eaten whole. Cut the kumquats in half lengthwise and remove any seeds (some varieties are seedless). Place kumquat halves in a blender with about 1-2 tbsp of water. Purée until smooth and no large pieces of fruit remain.Combine condensed milk and cream in a bowl until well mixed. Stir in lemon juice and fruit purée. Pour into prepared base.
Refrigerate for at least 2 hours but preferably overnight.
Serve chilled, cut into wedges.
