Kum hiong chicken details
INGREDIENTS:Serves 2-3
(A)
2 chicken thighs
1 tbsp sugar
2 tbsp light soy sauce
(B)
1 tbsp curry powder
5 garlic cloves, chopped finely
1 tsp coriander seeds
2 sprigs curry leaves
Salt to taste
Oil for deep frying
(C)
½ tbsp corn flour
1 tbsp water
Method:
- Cut chicken thighs into pieces. Clean and drain well.
- Marinade with sugar and light soy sauce for about 30 minutes.
- Heat oil in a wok or deep fryer and deep fry chicken until golden brown.
- Heat 2 tbsp of oil in a wok or frying pan. Sauté chopped garlic and coriander seeds until fragrant. Add in fried chicken and curry leaves. Continue to fry. Season with curry powder and salt.
- Mix ingredients (C) and pour in. Fry until sauce thickens.
- Serve while still hot.
