Kristin's breakfast quiche recipe details
- Ingredients
- 1/2 cup green pepper, chopped
- 1/2 cup onion, chopped
- One 8-ounce package chopped spinach, thawed
- 8 ounces fresh mushrooms, sliced
- 1/2 pound bacon (optional)
- 6 eggs
- 1 cup half & half cream
- 1/2 cup cheddar
- 1/2 cup mozzarella
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 frozen pie shell
This recipe was given to us by a friend who was a chef at the Chart House Restaurant. The quiche makes a fabulous breakfast or brunch. For a tangy flair, top with a tomato-based salsa.
Saute green pepper, onion, and mushrooms until tender. Bake pie shell at 400 degrees for 5 minutes. Break eggs and mix in bowl. Stir in half & half, salt, and pepper. Add remaining ingredients and mix thoroughly. Pour mixture into pie shell. Place pie shell on baking sheet to prevent spilling. Bake at 350 degrees for about 45 minutes or until tester comes out clean. Let sit for 5 minutes before serving.
When adding bacon, fry or microwave bacon until crisp. Place on paper towel to remove grease. Tear into bite-sized pieces and fold into mixture before baking.
