Ingredients

4 bulb(s) kohlrabi, trimmed, peeled, chopped, some leaves reserved
2 tbsp olive oil
1 medium onion, chopped
3 clove(s) garlic, minced
115 g mushrooms, chopped
3 tbsp single cream
salt and pepper, to taste

Instructions

Cook kohlrabi in lightly salted until tender, about 15 minutes.

Heat the olive oil in a skillet and sauté onion over low heat until softened, about 5 minutes. Add the garlic and cook, stirring, another 1 to 2 minutes.

Add the mushrooms and reserved kohlrabi leaves, cover, and cook for 5 minutes. Uncover, and cook, stirring, until all the liquid has evaporated, 3 minutes.

Drain the kohlrabi chunks and purée them in a blender. Add remaining cooked ingredients from the skillet and single cream and purée until smooth.

Transfer the purée to a saucepan and reheat over low heat, stirring, 2 minutes. To serve, season with salt and pepper, if desired.
