Kohlrabi pur e recipe details
Ingredients
4 bulb(s) | kohlrabi, trimmed, peeled, chopped, some leaves reserved |
2 tbsp | olive oil |
1 medium | onion, chopped |
3 clove(s) | garlic, minced |
115 g | mushrooms, chopped |
3 tbsp | single cream |
salt and pepper, to taste |
Instructions
Cook kohlrabi in lightly salted until tender, about 15 minutes.Heat the olive oil in a skillet and sauté onion over low heat until softened, about 5 minutes. Add the garlic and cook, stirring, another 1 to 2 minutes.
Add the mushrooms and reserved kohlrabi leaves, cover, and cook for 5 minutes. Uncover, and cook, stirring, until all the liquid has evaporated, 3 minutes.
Drain the kohlrabi chunks and purée them in a blender. Add remaining cooked ingredients from the skillet and single cream and purée until smooth.
Transfer the purée to a saucepan and reheat over low heat, stirring, 2 minutes. To serve, season with salt and pepper, if desired.
