Kohlrabi and potato ragout with sugar peas recipe details
Ingredients
2 medium | kohlrabi |
4 medium | potatoes |
250 g | sugar peas |
2 tbsp | butter |
1 tsp | clear liquid honey |
1 tbsp | lemon juice |
salt and pepper | |
ground nutmeg | |
200 g | single cream |
1 bunch(es) | chervil, if desired |
Instructions
Clean and peel the kohlrabi and potatoes and dice the vegetables in small cubes. Trim the ends, then halve the sugar peas.Heat the butter and sauté the kohlrabi and potatoes. Add in honey, lemon juice, salt, pepper and nutmeg. Cover the saucepan and simmer for approximately 10 minutes. Add the sugar peas and 100 ml water. Bring to the boil and simmer over low heat for further 5 minutes. Stir in the single cream and cook until slightly thickened. Check seasoning and correct, if necessary
Stir in the chopped chervil and serve.
