Kidney soup recipe details
Ingredients
1 lb | ox kidney |
½ lb | shin of beef |
1 | carrot, peeled and sliced |
1 | onion, chopped |
1 | turnip, peeled and chopped |
1 ½ ounce(s) | dripping or lard |
2 tsp | cornflour |
salt and freshly ground black pepper, to taste | |
1 tbsp | plain flour |
1 | beef stock cube, dissolved in a little water |
2 pint(s) | cold water |
Instructions
Cut up the kidney and the shin beef into neat pieces and toss in seasoned flour. Fry the cut vegetable with the meat in the hot dripping. Add the water and beef stock and bring to the boil, simmering slowly for three hours and then strain through a wire sieve. Take the best bits out and keep warm. The rest of the meat should be rubbed through the sieve and returned to the pan.Add two tablespoons of cornflour, blended to a paste with a tablespoon of cold water. Boil for two minutes, stirring and season to taste. To serve, add the reserved kidney and meat.
