Kerry apple cake recipe details
Ingredients
2 medium | cooking apples, cored, peeled and chopped |
175 g | unsalted butter, softened |
175 g | caster sugar |
2 medium | eggs, beaten |
225 g | self-raising flour |
1 tsp | lemon zest |
For the topping: | |
2 tbsp | Demerara sugar |
1 pinch(es) | ground cinnamon |
1 pinch(es) | grated nutmeg |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F. Grease and line a 2lb, 900g-1Kg loaf tin.Cream butter and sugar together in a bowl until light. Gradually add eggs and flour, alternating between the two. Stir in apples and zest.
Pour into prepared tin. Sprinkle over the demerara sugar and spices and bake for 1-1½ hours.
Check after an hour if golden brown on top, and continue baking if required. Insert a skewer into the centre of the cake and if it comes out clean, it is done.
Remove from oven and allow to cool in the tin on a wire rack. When almost cool, turn out the cake, remove lining and allow to cool completely.
Slice to serve.
Note:
This cake does not store well. It it is best consumed within 2-3 days at most. It may be chilled to improve storage but must be lightly warmed before serving, with cream or Greek-style yoghurt to choice. It is sometimes also eaten with a strong Irish cheddar.
