Ingredients
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
3 eggs, lightly beaten
3/4 cup oil
1 teaspoon vanilla
1-1/4 cup sugar
2 cups diced mango
1/2 cup raisins
1/2 cup coconut
1 cup nuts
Instructions:

Sift flour, baking soda, cinnamon, and salt, make a well, and add the eggs oil, vanilla, and sugar. Add the mango, raisins, coconut, and nuts. Mix together and let stand 20 minutes. Pour into pans. Bake for 1 hour at 350 degrees.

Makes: 2 loaves

* If using with bananas, add 1/3 cup of water.
