Jud's grilled lemon salmon recipe details
A terrific recipe for summer, this citrus-based marinade gives grilled salmon a fresh taste. He deserves it after all that swimming upstream.

Ingredients
Serves: 6- 1/2 cup fresh lemon juice
- 1 tablespoon minced fresh oregano
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 teaspoons minced fresh parsley
- 1/2 teaspoon salt
- 1 cup olive oil
- 6 (8 ounce) salmon fillets
Preparation method
Prep: 10 mins | Cook: 12 mins | Extra time: 30 mins, marinating1. In a small bowl, combine the fresh lemon juice, oregano, parsley, salt, and pepper. Whisk in the olive oil. This is the marinade.
2. In a 9×13-inch glass baking dish, arrange the fillets. Pour the lemon juice marinade over them, cover, and marinate at room temperature (turning once) for 30 minutes.
3. Heat grill to medium and lightly oil grate.
4. Remove fish from marinade, reserving marinade. Place fish on grill and grill for about 10 to 12 minutes, basting with marinade throughout and turning once. Have a spray bottle ready for possible flare-ups. Fish should be opaque throughout.Serving Suggestions
