Jim's famous apple nutand cranberry muffins recipe details
- Ingredients
- 2-1/4 cups canola oil
- 3 cups sugar
- 1 cup water
- 8 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 Tablespoons apple pie spice
- 1 Tablespoon baking soda
- 6 cups flour
- 2 diced apples
- 1 cup chopped walnuts
- 1 cup dried cranberries
Do not double, as this makes “a whole lotta muffins!”
Mix all ingredients except fruit and nuts in a large bowl with an electric mixer. Then add apples, walnuts, and cranberries. Fill greased muffin tins, sprinkle top with raw sugar, and bake until done! YUMMY!
