Japanese Marinated Mushrooms recipe
Are you tired of mushrooms marinated in Italian dressing? Me, too! I found this recipe while living in Japan; it’s great — and look, no oil. These are better if made at least 1 day in advance. Peggy
- Ingredients
- 2 pounds fresh button mushrooms
- 1/4 cup soy sauce
- 3/8 cup Mirin (Japanese cooking sake) or sweet sherry
- 1/2 cup white vinegar
- 1-1/2 teaspoons salt
- 1/2 cup minced onion, fresh or 1/4 cup dried minced onion
Instructions:
Cook cleaned, fresh mushrooms in boiling water for 3 to 5 minutes. Drain well.
Bring soy sauce, Mirin, vinegar, salt, and onions to a boil. Pour over mushrooms in a glass container. Refrigerate at least 24 hours; these will keep at least a week (if you don’t eat them all).
