This is a very moist cake with all the grated apples, raisins and pecans it could stand alone without a topping, however, with the praline glaze….well, you be the judge.

Ingredients
Serves: 20- 1 1/2 cups vegetable oil
- 2 cups white sugar
- 4 eggs
- 3 cups grated apples
- 3 cups plain flour
- 1 teaspoon soda
- 1 teaspoon salt
- 2 teaspoon allspice
- 1 cup chopped pecans
- 1 cup raisins TOPPING
- 1/2 cup of white sugar
- 1/2 cup of light brown sugar
- 1/2 cup half & half cream
- 1/2 cup butter
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 1 cup chopped pecans
Preparation method
Prep: 1 hour | Cook: 1 hour 10 mins | Extra time: 15 mins, cooling1. Preheat oven for 350 degrees F (175 degrees C).
2. In food processor, combine oil, sugar, and eggs; mix well.
3. Add grated apples, flour, soda, salt, allspice, pecans and raisins. Pour in well greased bundt pan.
4. Bake in the preheated oven for 70 minutes, or until a toothpick inserted near the center comes clean. Let cool in pan for 10 mins or so. Remove cake from pan and place on cooling rack.
5. Topping: Combine both sugars, half & half, salt in saucepan .Stir constantly until temp reaches 220 degrees then add butter, vanilla extract and chopped pecans constantly stirring until temp reaches 234 degrees F. Let mixture cool for 5 min and spread over top and sides of cake.
