Ingredients
125 g | plain flour |
50 g | cornflour |
½ tsp | salt |
115 g | unsalted butter |
1 tsp | vanilla extract |
250 g | caster sugar |
2 medium | eggs |
90 g | plain chocolate, melted |
250 ml | buttermilk |
1 tsp | bicarbonate of soda |
1 tbsp | vinegar |
filling and topping, to choice |
Instructions
Preheat oven to Gas Mark 5, 190ºC, 375ºF. Grease two 9-inch, 22 cm sandwich or shallow pie tins.
Sift flours and salt into a bowl and set aside.
Cream butter with vanilla until light and gradually add sugar, creaming until light and fluffy. Add the eggs, one at a time, beating well after each addition. Blend in the chocolate. Add dry ingredients one third at a time, alternating with buttermilk, added half at a time, blending well after each addition. Stir soda and vinegar together in a glass and immediately add to the mixture, blending well.
Divide the mixture between tins and spread to sides, levelling the surface. Bake for 25 minutes or until a skewer inserted into centre comes out clean. Cool in tins and transfer to a wire rack to cool.
Add a vanilla or chocolate filling, and topping, to choice. Recipes are available elsewhere on the site.
Slice to serve.
