Ingredients
Makes: 8 1/3 lb burger patties- 2 1/2 pounds ground beef, somewhere around 80-percent lean
- 2 eggs, beaten
- 2 tablespoons bread crumbs
- 2 tablespoons fish sauce (or Worcestershire – both flavored with anchovies)
- 1 tablespoon ground allspice
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 1 teaspoon ground thyme
- 1 teaspoon ground celery seed
- 1 dash ginger powder
- 1 dash soy sauce
- 5 cloves garlic, minced
- 2 limes, juiced
- 1 yellow onion, minced
- 2 jalapenos, with seeds (or without… you wuss), minced
- 3 tablespoons honey (for brushing onto the burgers while grilling)
- 1 cup chopped cilantro (for garnish)
- Many sheets Wax paper cut into burger patty sized squares
Preparation method
Prep: 30 mins | Cook: 15 mins1. Mix beef with eggs, bread crumbs, fish sauce, allspice, salt, black pepper, thyme, celery seed, ginger powder, soy sauce, garlic, juice of 1 lime, onion, and jalapeno in a LARGE mixing bowl. Use your hands, get dirty. This is food that, in another time, you used to have to kill for yourself. Is it all mixed up? Good. This should all hold together as long as you minced everything well enough.
2. Cut several sheets of wax paper into 8 patty-sized squares.
3. Take about a 1/3 pound (it doesn’t really matter) fistful of burger meat and roll it up into a ball. Press the ball into a patty that is 1 inch thick onto the wax paper square. It should be kinda round in a 5th grade arts and crafts kinda way. Did you fail? Do you need to repeat 5th grade? Try again!
4. Mix the honey with the remaining lime juice. Stir it up. Get your marinating brush, or a spoon if you don’t have one of those.
5. Prep your grill by brushing it with olive oil. Start the fire. You want a 3 second fire, meaning: hold your hand above the grill for longer than 3 seconds, and you’re on fire. Get someone dumb to test this for you.
6. Throw the burgers on the grill, 4 at a time. If you’re a good multitasker, try more – I’m an idiot, so I can usually only handle 4 at a time. Remember what order you put them on in, so you can flip em in that order. Yep. That job at Wendy’s is tougher than you think.
7. Let ’em sizzle for 10 minutes, then flip ’em, brush ’em with the lime/honey mix, and let ’em sizzle for another 5 minutes. This should make a well done burger. If you want something more manly, use a hotter fire, and flip faster.
8. Put the burgers on the buns. Top with a five-finger pinch of fresh cilantro. Does this need further explaining? Should you be playing with fire?
9. No cheese or ketchup needed. Lettuce? What, do you want a diet water with that, too? Just eat. Chew. Swallow. Be merry. Support your local brewery and wash it down with a good Pils or a Pale. The light hops flavor will pair nicely with your newly punched mouth.
10. Find the author of this recipe and punch him in the mouth for bonus points.Alternate method
For the people who laughed at the choice of jalapeno instead of the traditional scotch bonnet, get yourself some naga pepper sauce and add 1 (one) drop onto your burger. If you don’t know what the naga pepper is, best not to try it first off. If you’ve got some fresh guacamole, that works too. A slice of fresh pineapple also works on top of this.
