Jerez's caramel cookies recipe details
A very sweet cookie with Latin American flavors of rum and milk caramel. The special texture of these cookies will certainly please your taste. The milk caramel jam is a Hispanic sweet that we call dulce de leche.

Ingredients
Serves: 24- 3 cups flour
- 1/4 cup confectioners sugar
- 2 egg yolks
- 1 cup butter
- 7 ounces milk caramel jam (dulce de leche)
- 3 tablespoons rum
Preparation method
Prep: 15 mins | Cook: 15 mins | Extra time: 1 hour, chilling1. In a large bowl sift together the flour and confectioners sugar, then set aside.
2. In a medium bowl cream together the butter and the milk caramel jam using a fork. Then using an electric mixer, beat until smooth.
3. Beat in the egg yolks and the rum. Gradually mix in the sifted ingredients until well blended. Refrigerate until chilled, about 1 hour.
4. Preheat oven to 350 degrees F and lightly coat a baking sheet with nonstick cooking spray.
5. On a lightly floured surface, roll the dough out to 1/4-inch thickness. Cut into shapes using cookie cutters. You can deep the cutter in confectioners’ sugar for extra sweetness. Place the cookies on prepared baking sheet.
6. Bake the cookies for 15 minutes, until firm to touch. Cool for a few minutes on baking sheets before removing to wire racks to cool completely.
