Jamaican vegetables rice and beans recipe details
Ingredients
75 g | streaky bacon, roughly chopped |
1 | onion, chopped |
2 clove(s) | garlic, finely sliced |
800 g | red Kidney beans, drained and rinsed (2 tins) |
400 ml | coconut milk (1 tin) |
250 g | ham, sausage or Polish sausage leftovers |
½ tsp | cayenne pepper |
½ tsp | dried thyme or a sprig of fresh |
200 g | rice, raw, or use the according amount of leftover cooked rice |
vegetables, leftovers as: courgette, broccoli, peppers, peas etc or a handful of several fresh | |
salt and freshly ground black pepper, to taste | |
coriander, chopped | |
tabasco or sweet chili sauce to your taste |
Instructions
Cook the chopped bacon in a pan until the fat runs and add the onion and garlic, cooking until just soft. Add the beans, coconut milk, ham, cayenne pepper and thyme and bring to the boil. Cook for approximately one minute, stirring.Add the rice and 450 ml of boiling water if using uncooked rice, and simmer for about 25 minutes. Add the left-over vegetables, coriander and tabasco or chili sauce and simmer until everything is heated through.
If using cooked rice, add with the leftover vegetables but don’t add water, and cook until all ingredients are heated through. Add the sauces to taste.
Serve with extra sauce if wanted.
