Ingredients
250 g | self-raising flour |
1 pinch(es) | salt |
125 g | vegetable suet |
water | |
4 tbsp | raspberry jam, warmed, use more if you wish |
milk | |
1 medium | egg, beaten |
caster sugar |
Instructions
Options: replace raspberry jam with similar amounts of strawberry or other strong flavoured jam or lemon curd.This is one of the few suet puddings that is normally baked rather than steamed. However, steamed versions are occasionally found.
Preheat oven to Gas Mark 6, 200°C, 400°F.
Sift flour and salt into a bowl, add suet and just enough water to create a soft but not sticky dough.
On a floured surface, roll out the dough to a 20x30cm, 8×12 inch rectangle. Brush the surface with the warm jam, leaving a 1cm or 3/8 inch around the edges.
Brush the borders with milk and fold them over. Roll the dough down towards you from the shorter side, but not too tightly.
Place on a greased baking dish with the seam down and brush top with beaten egg and sprinkle lightly with caster sugar.
Bake for 35-40 minutes until golden.
Sprinkle with extra sugar before serving, with custard.
Will serve up to 6.
