Ingredients
Serves: 6- 1 1/2 pounds pork shoulder, cut into 1/2-inch cubes
- 1/2 cup flour
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 3 cloves garlic, minced
- 1 (28 can) chopped tomatoes
- 1 cup chicken broth
- 3 tablespoons chili powder
- 1/4 teaspoon salt
- 2 (15 ounce) cans pinto beans, drained and rinsed
Preparation method
Prep: 20 mins | Cook: 2 hours1. Combine pork and flour in a large plastic resealable bag. Seal and shake to coat the pork with the flour. Meanwhile, heat vegetable oil in a large saucepan over medium heat.
2. Cook pork in hot oil for about 5 minutes to brown, then remove from pan.
3. Cook onion, peppers, and garlic in same saucepan for about 5 minutes, then transfer the cooked pork back into the saucepan. Add remaining ingredients, except beans, and bring to a boil. Simmer for 1 hour on low heat.
4. Add beans and simmer for another 40 minutes, stirring occasionally.
