Italian turnip and rice soup recipe details
Ingredients
500 g | turnips, peeled and diced |
1 ½ liter(s) | vegetable stock |
100 g | rice |
2 tbsp | butter, melted |
1 tbsp | olive oil |
120 g | Parmesan cheese, freshly grated |
some | fresh parsley, finely chopped |
salt and freshly ground black pepper, to taste |
Instructions
In a large saucepan, heat butter and olive oil until frothy. Stir in turnips and cook for 4-6 minutes, until brown. Pour in the vegetable stock and bring to a boil. At medium heat, cook for 12 minutes, lid on.Add rice, cover and cook for further 15 minutes.
Season with salt and pepper. Serve the soup in soup plates and sprinkle with parsley and Parmesan cheese.
