Italian style vegetable plate recipe details
Ingredients
3 | bell peppers, red, green and yellow, quartered |
1 | aubergine, sliced and salted |
1 | courgette, sliced |
1 bunch(es) | carrots, sliced |
250 g | large mushrooms, sliced |
5 tbsp | olive oil |
5 tbsp | sugar |
5 tbsp | balsamic vinegar |
some | salt and pepper |
Instructions
Preheat the oven to 180°C. Allow the salted aubergine slices to stand for 15 minutes. Rinse under cold water and pat dry.Place the bell peppers skin side up on an oiled baking tray and bake until slightly charred. Cover with a wet cloth for some minutes, then peel off the skin.
In a pan, heat 1 tablespoon of oil. Fry the aubergines from both sides for 2 minutes. Sprinkle with pepper and sugar and caramelize. Pour in 1 tablespoon of vinegar and turn the aubergines gently. Remove from the pan.
Heat in the pan the remaining oil and stir-fry the other vegetables. Season with pepper and sugar and caramelize. Pour in the the remaining vinegar.
To serve, arrange the vegetables on a large serving plate.
