This Italian style meat loaf recipe is a delicious twist on the classic comfort food. Made with a combination of ground beef, Italian sausage, and flavorful herbs and spices, this meat loaf is bursting with savory Italian flavors. Ingredients

1 bunch(es) basil, chopped
200 g Feta cheese, diced
100 g sundried tomatoes in oil, diced
200 g cream cheese
2 medium onions, chopped
800 g mince meat
1  egg
2 tbsp breadcrumbs
salt and pepper
1 tbsp olive oil
2 tbsp tomato paste
1 large can(s) tomatoes, diced
1 tsp instant vegetable stock
1 pinch(es) sugar
150 ml water
1 tbsp butter

Instructions

Preheat the oven to 190°C.

In a bowl, mix the feta cheese, cream cheese, sundried tomatoes and basil until well combined. Season with pepper.

In a bowl mix the mince meat with breadcrumbs, the egg and half of the onions. Season with salt and pepper and knead, until well combined.

Place the mince dough onto a floured surface and form a rectangle. Spread evenly the cheese mixture on the meat. Roll up the rectangle and form a loaf. Cover with aluminium foil and transfer the loaf onto a lined baking tray. Bake for 60 minutes. Remove the foil after 30 minutes.

In a saucepan, heat the butter. Add the remaining onions and sauté over medium heat until golden. Stir in the tomato paste, tomatoes and water and bring to a boil. Stir in the vegetable stock, reduce the heat and simmer for 15 minutes. Season to taste with salt, pepper and sugar.

Serve the meat loaf with the sauce and rice!
