Italian style meat loaf recipe details
Ingredients
1 bunch(es) | basil, chopped |
200 g | Feta cheese, diced |
100 g | sundried tomatoes in oil, diced |
200 g | cream cheese |
2 medium | onions, chopped |
800 g | mince meat |
1 | egg |
2 tbsp | breadcrumbs |
salt and pepper | |
1 tbsp | olive oil |
2 tbsp | tomato paste |
1 large can(s) | tomatoes, diced |
1 tsp | instant vegetable stock |
1 pinch(es) | sugar |
150 ml | water |
1 tbsp | butter |
Instructions
Preheat the oven to 190°C.In a bowl, mix the feta cheese, cream cheese, sundried tomatoes and basil until well combined. Season with pepper.
In a bowl mix the mince meat with breadcrumbs, the egg and half of the onions. Season with salt and pepper and knead, until well combined.
Place the mince dough onto a floured surface and form a rectangle. Spread evenly the cheese mixture on the meat. Roll up the rectangle and form a loaf. Cover with aluminium foil and transfer the loaf onto a lined baking tray. Bake for 60 minutes. Remove the foil after 30 minutes.
In a saucepan, heat the butter. Add the remaining onions and sauté over medium heat until golden. Stir in the tomato paste, tomatoes and water and bring to a boil. Stir in the vegetable stock, reduce the heat and simmer for 15 minutes. Season to taste with salt, pepper and sugar.
Serve the meat loaf with the sauce and rice!
