Italian Pork Dish recipe
|800 g||loin pork, cubed|
|400 g||chopped tomatoes, canned, undrained|
|400 ml||chicken broth|
|1 medium||onion, chopped|
|200 g||spinach leaves, shredded|
|50 g||basil leaves, finely chopped|
|Parmesan cheese, grated|
|olive oil, for frying|
Fry the pork in a saucepan in a little bit of olive oil until nicely browned. Add tomatoes, chicken broth and onion. Bring to the boil. Reduce heat, cover, and cook for 15 minutes. Stir in the spinach and basil and cook for 2 more minutes.
To serve, sprinkle with grated Parmesan cheese.
