Italian Morning Eggs recipe

- Ingredients:
- 1 cup sun dried tomatoes
- 1/8 cup olive oil
- 3 cloves garlic
- 1/2 cup water (or half water, half wine mixture)
- 4 eggs
- 1 package frozen spinach
- 1/4 cup shredded fresh Parmesan cheese
- 1/4 cup fresh basil leaves
Instructions:
30 minutes prior to serving, add the first four ingredients together and let set for fifteen minutes in skillet. Saute tomatoes until soft and plump for approximately 10 minutes. Crack the 4 eggs on top of the now-plumped tomatoes. Dust generously with a mixture of the Parmesan cheese and basil. Cover and cook till eggs are set as desired (approximately 5 minutes); add more water if needed. Meanwhile, microwave spinach per package directions.
Place 1/4 of the cooked spinach per plate, set 1 egg and tomatoes on top of the spinach, garnish with fresh basil leaves.
Comments:This is a very popular dish as it is low-fat and very attractive. Serve with rosemary potatoes, lemon scones, fresh fruit, and spiced tomato juice.
