Italian low fat pancakes with orange rum marmalade details
These wonderful and healthy pancakes can be served with fresh berries, warm sliced peaches, a ginger/pear chutney, or sauteed apples. They make a perfect start to a chilly fall/winter day.
- Ingredients – Pancakes:
- 1 cup unbleached white flour
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 4 eggs
- 1 cup low-fat ricotta cheese
- 1 cup low-fat small-curd cottage cheese
- 3/4 cup low-fat milk
- 1 teaspoon vanilla extract
- Vegetable oil
- Ingredients – Orange Rum Marmalade:
- 3 teaspoons sugar-free orange marmalade
- 1 ounce (1 shot) Bacardi orange rum
In a bowl, stir together the flour, sugar, salt, and baking powder. In another bowl, beat the eggs with the ricotta cheese, cottage cheese, milk, and vanilla. Slowly add the wet ingredients to the dry, stirring just until blended. Do not over mix.
Heat a griddle or heavy skillet over medium heat and lightly grease with vegetable oil. Drop the batter into the skillet in heaping teaspoonfuls. When the pancakes are bubbly on the top and slightly browned on the bottom, flip them. Keep warm in a 250-degree oven until ready to serve.
Orange Rum Marmalade: In a small, heavy saucepan, mix together the rum and marmalade over a low flame., stirring constantly for about 5 minutes until all of the alcohol has evaporated.
