Italian bread salad recipe details
Ingredients
750 g | tomatoes, sliced |
1 bunch(es) | spring onions, finely sliced |
6 sprig(s) | parsley, chopped |
2 clove(s) | garlic, finely chopped |
1 | Ciabatta bread, in approx. 2cm cubes |
3 tbsp | white wine vinegar |
salt and freshly ground black pepper | |
1 pinch(es) | sugar |
10 tbsp | extra virgin olive oil |
Instructions
Mix the vinegar with salt, a pinch of sugar and pepper. Whisk in 6 tablespoons of oil.In a pan, heat the remaining oil and fry the bread until golden and crispy all around.
Combine tomatoes, spring onions, garlic, bread and parsley in a salad bowl. Pour over the dressing and toss until all is well coated.
Serve immediately.
