Lemon heaps recipe details
Ingredients
200 g | mascarpone |
2 tbsp | vegetable oil |
80 g | sugar |
2 tbsp | lemon juice |
1 tbsp | lemon peel |
200 g | plain flour |
1 tbsp | baking powder |
some | milk if needed |
some | icing sugar and lemon juice for glacing |
Instructions
Mix mascarpone, oil, sugar, lemon juice and beat together until creamy. Put in flour and baking powder and mix until a smooth dough forms. If needed add some milk, the dough will be a bit sticky, therefore leave it in the fridge for about 15 minutes.As soon as the dough is compact enough, spoon little heaps onto a baking tray and bake on 180-200°C degrees for about 15-20 minutes until surface turns lightly brown.
Leave to cool and brush on the glazing of icing sugar and lemon juice. The heaps should be soft in the centre.
