A basic, yummy, Irish soda bread. The cake flour gives it a light and airy consistency, while the butter gives it a nice flavor and crunch.

Ingredients

Serves: 8
  • 2 1/2 cups of all-purpose flour
  • 1/2 cup of cake flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1/4 teaspoon of sugar
  • 2/3 cup of buttermilk
  • 2/3 cup of heavy cream
  • 3 tablespoons of melted butter
  • Olive oil

Preparation method

Prep: 10 mins | Cook: 40 mins

1. Preheat oven to 400 degrees F (200 degrees C).
2. Mix together dry ingredients and wet ingredients in separate bowls.
3. Add wet ingredients to dry ingredients in a large bowl, stirring until a dough is formed.
4. Form dough into a large, round flat circle, placing on a lightly olive oil brushed baking pan. Brush dough lightly with olive oil.
5. Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for an additional 25 to 30 minutes, until golden brown.
