Individual cheese souffles recipe details
- Ingredients
- 1 teaspoon butter
- 1/2 cup chopped mushrooms
- 2 to 3 teaspoons minced green and red onion
- 1 Tablespoon minced parsley
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 6 eggs, separated
- 2 teaspoons cognac or brandy
- 1/4 teaspoon dry mustard
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cayenne pepper
- 1 cup ricotta cheese
- 3/4 cup Parmesan cheese
- 3/4 cup Swiss cheese
Saute mushrooms and onion in butter with parsley, basil, and thyme. Evenly distribute mixture in the bottom of cups. Beat egg whites until stiff. In another bowl, combine the rest of ingredients. Fold egg whites into mixture. Fill cups with egg mixture. Bake at 425 degrees for 15 to 20 minutes.
