Ingredients
100 g | okra |
250 ml | coconut milk |
4 tbsp | raisins |
2 tbsp | olive oil |
½ | bell pepper, sliced |
1 | chili, sliced |
1 tbsp | fresh root ginger, chopped |
1 tbsp | garlic, chopped |
2 | bay leaves |
1 tsp | coriander seeds, ground |
½ tsp | cayenne pepper |
¼ tsp | turmeric, ground |
¼ tsp | cumin seeds, ground |
⅛ tsp | cardamom, ground |
⅛ tsp | black pepper, ground |
⅛ tsp | cinnamon, ground |
1 small | tomato, sliced |
1 tbsp | water |
some | salt, to taste |
Instructions
In a frying pan, heat oil over medium heat. Add the sliced bell pepper and fry until tender. Add chili, ginger, garlic and bay leaves and cook for 2-4 minutes. Stir in all the spices and cook for 3 minutes. Mix in the tomato slices and raisins. Cook the mixture for 2 minutes. Stir in the okra and mix well.Pour coconut milk and water into the mixture. Cook the covered mixture for 9-11 minutes, stirring occasionally. Season with salt and serve.
