Something in between a scone and a muffin which I devised about 2 years ago. 100% vegan. When people taste these they always ask for the recipe. It’s something they have never tasted before. Here is the latest modified version – they just keep on tasting better…

Ingredients
Serves: 8- 1 cup raisins
- vanilla soy milk to cover
- 3 cups whole wheat flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon kelp
- 1 teaspoon salt
- 2 teaspoons cardamom
- 1 cup demerara sugar
- 3/4 pound mashed bananas
- 1/2 cup oil
- 1 teaspoon vanilla extract
Preparation method
Prep: 1 hour 15 mins | Cook: 25 mins1. Soak raisins in soy milk 1 hour; drain.
2. Preheat oven to 350 degrees F (175 degrees C).
3. In medium bowl mix flour. cream of tartar, baking soda, kelp, salt, and cardamom. Stir in raisins.
4. In larger bowl cream together demerara sugar, bananas, oil, and vanilla extract. Gently mix dry ingredients into wet ingredients to form a sticky-ish dough. Divide into 16 pieces. Shape with moist hands. Place on greased baking sheet.
5. Bake in the preheated oven until golden brown, about 25 minutes.
