Ingredients
1 | onion, chopped |
100 g | potatoes, peeled and diced |
300 g | peas |
1 tbsp | oil |
salt and freshly ground black pepper | |
500 ml | vegetable stock |
1 sprig(s) | rosemary, chopped |
1 clove(s) | garlic, minced |
6 slice(s) | white bread |
3 tbsp | olive oil |
100 g | sour cream |
4 tbsp | single cream |
sugar | |
300 ml | buttermilk, ice-cold |
5 sprig(s) | mint, chopped, keep some leaves for garnishing |
Instructions
Pour boiling water over the peas and allow to stand for 2 minutes, then strain.In a saucepan, heat the oil and sauté the onions and potatoes. Season with salt and pepper. Pour in the stock. Cover and simmer for 20 minutes. Allow to cool.
Place 4 large serving glasses into the freezer.
Preheat the oven to 175°C. Sprinkle the bread slices with garlic, rosemary and olive oil. Bake until golden.
Mix the single cream with the sour cream and mint. Season to taste with salt and sugar.
Stir the peas and ice-cold buttermilk into the soup and purée the soup with a hand blender. Season to taste with salt and pepper.
Pour the soup into the ice-cold glasses and top with a dollop of mint cream. Garnish with the mint leaves. Serve with the crispy bread.
