Iced courgette soup with basil recipe details
Ingredients
2 medium | courgettes |
2 tbsp | olive oil or softened butter |
1 bunch(es) | basil |
2 tbsp | lemon oil, made by infusing olive oil with some lemon zest |
50 g | pine nuts, toasted, made by heating on high for 30secs in saucepan until coloured, watching all the time |
1 pinch(es) | salt |
1 pinch(es) | freshly ground black pepper |
Instructions
Gently sauté sliced courgettes in plain oil for a 5 minutes. Cover with water and boil for 5 minutes. Leave contents to cool.Pour into blender with the basil, lemon oil and pine nuts. Blitz until smooth, season to taste. Chill in fridge.
When ready pour into glasses and serve with some salmon roe or basil sprinkles and a drizzle of lemon oil if wanted. This works very well with the golden courgettes.
