Huevos criollos recipe details
This is an American take on Venezuelan “perico” – scrambled eggs.

Ingredients
Serves: 1- 1 teaspoon olive oil
- 1 clove garlic, chopped, germ removed
- 2 tablespoons water
- 5 dashes of Tabasco or Hot sauce
- 2 eggs
- 1 wedge of Laughing Cow Cheese (ham flavored)
Preparation method
Prep: 5 mins | Cook: 5 mins1. place cold oil and garlic together in pan on LOW heat oil to infuse the garlic into the oil – do not heat oil first, the garlic will burn
2. beat water, Tabasco, and eggs together until completely mixed and begins to froth
3. pour egg mixture into the oil so that it spreads the oil into the pan
4. place chopped pieces of cheese throughout before “rolling” the eggs
5. starting from point on the skillet, push or pull cooked eggs in one direction letting uncooked eggs flow back onto the skillet
6. continue rolling the uncooked eggs until most of the mixture is cooked
7. turn off heat and remove skillet and continue rolling the eggs
8. the eggs should not be dry
9. serve immediately with toasted bread or Venezuelan “arepas”
