Hot lemon chicken recipe details
Ingredients
2 | chicken, each devided into 6 pieces |
2 | lemons, squeezed |
1 tbsp | salt |
2 | red hot chilies, seeded and chopped |
5 tbsp | olive oil |
500 g | onions, sliced |
500 g | fennel, sliced |
500 g | cherry tomatoes, halved |
salt to taste | |
fresh chopped herbs of choice |
Instructions
Pestle the chilies thoroughly.Dissolve the salt in the lemon juice, stir in the chilies and olive oil, mix well and let the chicken pieces marinate in the mixture for 1-3 hours in the refrigerator.
Preheat the oven to 225°C/435°F. Grease the dripping pan and spread the vegetable on it. Season with salt and herbs.
Arrange the chicken pieces on top of the vegetables and drizzle with the remaining marinade. Roast for 45 minutes, until crispy brown.
Serve with Baguette or Ciabatta.
