Ingredients

Serves: 4
  • 3 slices bacon, chopped
  • 1 (8-inch) prebaked pizza shell, such as Boboli(R)
  • 6 slices Monterey Jack cheese
  • 1 potato, thinly sliced
  • 2 tablespoons water
  • 1/4 cup chopped onion
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ricotta cheese
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 3 slices Muenster cheese
  • 2 tablespoons finely shredded sharp Cheddar cheese

Preparation method

Prep: 25 mins | Cook: 15 mins

1. Place bacon in a skillet and set over medium heat. Cook until crisp, turning often; drain on paper towels and set aside.
2. Preheat oven to 400 degrees F.
3. Top crust with 4 of the slices of Monterey Jack cheese, set the crust on a baking sheet, and bake to melt the cheese (about 7 minutes).
4. While the crust is baking, arrange the potato in a glass or plastic dish and drizzle with the 2 tablespoons water. Cover with plastic wrap or a plate. Microwave on High for about 5 minutes, until the potatoes are cooked through and fork-tender. Pour off water.
5. Melt butter in a large skillet over medium-high heat. Add onion and cook for about 5 minutes to soften, then stir in cooked potato, salt, and pepper. Continue to cook the mixture to brown the potatoes, about 6 more minutes.
6. In a small bowl, stir ricotta together with mustard and garlic. Coat the warm pizza shell with the mixture, then top with browned potatoes, onion, remaining cheeses, and cooked bacon.
7. Return the pizza to the oven. Bake for another 10 minutes to melt all cheeses, then slice into wedges and serve.
