Hot and Spicy Parsley and Mint Salad recipe

Ingredients
200 g | bulgur |
3 bunch(es) | flat leaf parsley, finely chopped |
1 bunch(es) | fresh mint, finely chopped |
6 | tomatoes, seeded and diced |
1 | cucumber, peeled, seeded and diced |
3 | spring onions, trimmed and thinly sliced |
1 | lime, juice |
1 | red hot chili pepper, or 2, if you like it very hot, seeded and finely chopped |
4 tbsp | extra virgin olive oil |
salt and freshly ground black pepper, to taste |
Instructions
Place the bulgur into a bowl and pour over the double amount of hot salted water or vegetable stock. Allow to soak and cool down for 20 minutes.
Whisk the lime juice with the olive oil, salt and pepper.
If necessary drain the bulgur. With your fingers loosen any lumps in the bulgur. Add tomato, cucumber, spring onions, chili, parsley and the mint. Pour over the marinade and toss gently. Adjust seasoning.
