Horseradish and potato soup recipe details
Ingredients
250 g | potatoes |
150 g | spring onion |
1 clove(s) | garlic |
30 g | butter |
salt and pepper | |
1 pinch(es) | sugar |
150 ml | dry white wine |
500 ml | water |
200 ml | chicken stock or vegetable stock |
240 g | single cream |
60 g | fresh horseradish |
6 | straws of chive |
6 | red radish |
4 tbsp | olive oil |
2 tbsp | water |
1 tsp | maple syrup |
2 tbsp | lime juice |
Instructions
Peel and dice the potatoes and the spring onions. Peel and finely chop the garlic.Heat the butter in a saucepan and sauté the garlic and the onions until lucent. Add the potatoes and sauté for a few minutes. Season with salt, pepper and a pinch of sugar. Deglaze with the white wine, then add the water and the chicken stock. Stir in the single cream, bring the soup to a boil and simmer for 30 minutes.
In the meantime, peel and finely grate the horseradish. Finely slice the chives and thinly slice the radishes. Mix the olive oil with the water and the maple syrup and pour over the radishes.
Purée the soup when cooked and stir in the lime juice and 45g of the grated horseradish. Season to taste with salt, pepper and sugar.
Ladle the soup into soup plates or bowls and serve with slices of the marinated radishes and sprinkle with chives and a little of the remaining grated horseradish.
