Honey glazed gammon recipe details
Ingredients
3 kg | gammon joint |
2 handful | cloves |
1 | large onion, peeled and halved |
2 | bay leaves |
1 l | fresh orange juice, approximately, you may need more or less |
60 g | brown sugar |
2 | oranges, grated peel |
2 tbsp | runny honey |
Instructions
Cover the gammon in a large pot with water and bring to a boil. Remove from the pot and pat dry.Return the gammon into the cleaned pot and cover completely with a half-and-half mixture of orange juice and water. Add the onion halves, each studded with 2 cloves, and the bay leaves. Cover with a lid, bring over medium heat to a boil and simmer at low heat for about 3 hours. You might need to add more hot water from time to time.
Preheat the oven to 180°C.
Take the gammon out of the pot and pat dry. Take off the skin of the gammon and score into the fat the classical diamond pattern with the tip of a sharp knife. Stud each diamond with a clove. Place the gammon into a roasting tin.
In a bowl, mix the honey with orange peel and stir until well combined. Coat the gammon completely with the glaze.
Roast the gammon for about 50 minutes in the oven, basting frequently with the glaze and the gravy in the pan. The gammon is perfect when golden brown.
Let rest for a while then carve the gammon in slices. Serve warm or cold.
