Ingredients
800 g | codfish fillets, frozen |
1 bunch(es) | parsley, chopped |
2 slice(s) | toast |
1 | onion, chopped |
300 g | peas, frozen, thawed |
2 | eggs |
1 | lemon, juice and grated peel |
200 g | Greek rice noodles |
salt and freshly ground black pepper | |
5 tbsp | butter |
4 tbsp | flour |
6 tbsp | oil |
Instructions
Defrost the fish and cut the fish into fish finger stripes. Ground the toast. Break the eggs into a soup plate and whisk slightly with a fork. In another plate mix the flour with a pinch of salt and in a third plate put the breadcrumbs. Turn the fish stripes first in the flour, then in egg and finally in the breadcrumbs.In a large pan, heat the lard. Fry the fish fingers until golden brown and crispy all around.
Cook the Greek rice noodles in salted water until done, then strain.
In a pan, melt a tablespoon of butter. Sauté the onions until lucent. Add the peas and the noodles and cook stirring for some minutes. Season to taste with salt and pepper. Fold in the parsley.
Melt the remaining butter and stir in the lemon juice and ˝ a teaspoon of zest. Season to taste with salt.
Serve the fish with the lemon butter and the noodle and pea mixture.
