Hoisin chicken details
INGREDIENTS:300g chicken breast, cubed
1 red pepper
1 green pepper
3 garlic cloves, chopped finely
3 tbsp cooing oil
Marinade:
2 tbsp light soy sauce
1 tbsp corn flour
Dash of pepper
Seasoning:
50ml water
2 tbsp hoisin sauce
1 tbsp oyster sauce
1 tsp Shaoxing wine
Pinch of salt
Method:
- A day before serving the dish, marinate cubed chicken breast with the marinating ingredients. Chill in fridge.
- Cut the peppers in half and scrape out the seeds and pale membrane. Cut into large pieces.
- In a wok, heat the oil on high heat. Stir in the chopped garlic and stir-fry until fragrant. Add the marinated chicken and continue to fry until meat is half cook. Add the peppers.
- Season the dish with the seasoning ingredients. Cover the wok and let it simmer for 2-3 minutes until gravy thickens.
- Taste and add more salt if required.
- Dish out and serve hot.
