Hilltop house blue corn pancakes recipe details
- Ingredients
- 1 cup blue corn flour (or yellow corn meal)
- 1 Tablespoon sugar
- 1 teaspoon salt
- 2 cups boiling water
- 1-1/2 cups milk
- 2 cups flour
- 1 Tablespoon baking powder
- 2 large eggs
Mix blue corn flour/yellow cornmeal, sugar, salt, and water in a large bowl. Set aside for 5 minutes. Stir in milk. Set aside for 5 minutes more. In a medium bowl, combine flour and baking powder. Beat eggs and flour mixture into the cornmeal mix.
Use 1/3 cup of batter per pancake. Cook pancakes on greased (or sprayed with non-stick spray) griddle. Flip when bubbles start to break and edges look dry.
Makes: 20 to 30 four-inch pancakes.
