Ingredients
350 g | shortcrust pastry |
4 tsp | sugar |
4 | cooking apples, peeled and cored with an apple corer |
60 g | sultanas |
grated rind of half an orange | |
1 tsp | orange marmalade |
8 g | soft butter |
milk, for glazing | |
sugar, for glazing |
Instructions
Preheat the oven to 200°C.On a lightly floured surface roll out the shortcrust pastry. Cut out 4 rounds large enough to enclose an apple. Sprinkle each round with sugar. Place an apple in the centre of each.
In a bowl mix together the sultanas, orange peel, marmalade and butter. Stuff the mixture into the core of the 4 apples. Wrap the apples with the pastry and seal firmly on top.
Place the apples upside-down on a greased baking tray. Cut out leaves of the remaining pastry and decorate the apples. Brush with milk and sprinkle with sugar.
Bake at 200°C for the first 10 minutes, then reduce the heat to 180°C and bake for further 30 minutes until the apple dumplings are golden brown.
Serve with warm marmalade or custard or cream.
